For those who enjoy spicy foods, this is the time of year we can love. I had a great red Caribbean hab harvest this year, and the simple Rick Bayless salsa from these may be the best thing you can put in your mouth. It's not for the faint of heart, but is so ridiculously good if you can handle the heat.
15 red Caribbean Habs, fire roasted and then seeded.
5 large cloves of garlic, charred over fire or in pan
Chop all this up pretty fine
1 tablespoon or so of fresh lime juice and then some kosher salt.
Best salsa ever.
If it weren't for parental sportsball obligations (guh), I'd be home making another batch right now.
I've got some Fresno, Serrano and Calabrian I need to do something with. They may just get dehydrated. I still have fermented sauces from last year.

I'm curious about the lack of maters too. I've never made a pepper exclusive salsa. I'm intrigued!
