Brined Pan to oven monster chops were a success! Next time I'm gonna stuff em!
Found a few recipe that use cream cheese and spinach stuffing that might be a possibility!

I just like thick iowa chops grilled with some herbs de Provence on them. +1 on brining, but often for me that just amounts to sprinkling them with salt and leaving them on the counter for an hour before cooking.
