Cold smoked some salmon this week - Trub Lou - 10-23-2020

Oh man.  Simplest approach ever.... Brown sugar, salt, and a dash of pink salt. Fridge for 2 days, then put inside the BGE with one of those stainless coils filled with alder dust for 12 hours.  My breakfast today was a pound of it lol.  So delicious.

WhAt is a caper?! I've had them, they don't really add much to the taste for me personally so I would rather do without them. Did you slice the salmon thinly? Most smoked salmon I've bought is pretty thin sliced, my hot smoked is just standard sizes fillets (8oz or so). You should cold smoke a little cheese with your next salmon run!!

Yeah, sliced paper thin. Capers are almost essential with the salmon and cream cheese on the bagel. Almost.
