Big Ass Pork chops!

Fareway had a sale on some of the biggest center cut chops I've ever seen in the state of Iowa!  What's best way to cook them?  I'm thinking about doing them the way I do my filet mignons...pan fry/baste for a few minutes with garlic butter/spices, 2 minutes per side then throw in 400 degree oven for finish.  I found a recipe that calls for doing a salt water brine, never done that,  I may try.

I got some oven fry, but I'm thinking that's more for thin chops!

Will do!  Each chop is over a pound a piece.
I am anxious to try a salt brine.  Making them tomorrow night!!  Hope your day went well DJ!    KC gutted it out last night!!

Hmmmmm.......

Like breadcrumb stuffing or something else??

I got eight of them, 2 meals worth.  Maybe go old school for first go round then stuff them for next meal!!

You can stuff them with a lot of stuff. I've had Stovetop Stuffing, pizza sauce/pepperoni\mozz at finish, olives/basil/garlic/feta at finish.
Probably some better ideas online..

I get thick cut chops at Costco, found sous vide the best way to get them cooked without drying them out. Then cast iron pan to sear.

I need to explore getting a sous vide setup someday. I just recently got an air fryer. I'm usually about 5 years behind the curve on new kitchen gadgets Smile
