You can't taste the cocoa and cinnamon individually... they combine with the other spices.
The first time I made it I was reminded of Indian cuisine.

Cinnamon. A little Cinci twist! Gonna do ribs, probably in oven. Trying to decide if I should smoke then a few hours first..

Watching this video of Hot for the Teacher gave me some chills. WVH rocks it pretty solid.

Got some baby back ribs ready for the smoker.
Had planned a 20 hour sous vide ribs cook but had a few drinks last night and never set an alarm so I am doing a traditional smoked ribs
I suck at smoking ribs! Tried 3 2 1 route and other ways. They are always dry or tough or both. Family is fine with 3 hours in the oven at 275 so why cross them Smile

Did some 3-2-1 that ended up being 3-2-2.5. Very good... 6 racks is definitely at capacity for the large BGE. I don't think I could have fit a single ABT on there.
I can get good flavor using 321 but the meat is fall off the bone, don't want that. Been trying 311, straight four to five no wrap and haven't been happy yet. I can't get ribs
I split the racks, thick end snuggled up against a pan of hot water that is between the 'HOT' side of my pellet smoker and the ribs.
4 hours @ 200 1 @ 225.
Perfect every time.
Right tender, right bark, right smoke, right juicy.
So fa king easy.
